How To Freeze the Top Layer of Your Wedding Cake

Some couples still follow the tradition of saving the top layer of their wedding cake to be enjoyed at their first year anniversary. If you would like to follow tradition, here’s the right way to do it. I asked pastry chef and cake designer Tiffany Jones of Peridot Sweets for the right way to freeze a cake:

“First, freeze the top tier of your wedding cake for about an hour, uncovered, to firm up the frosting.  Once firm, wrap in 2-3 layers of plastic wrap, then 2 layers of foil.  Store in the very back of your freezer (this is the coldest part).” 

I also tell many of my couples that they should consider asking their cake designer to simply recreate a fresh cake for their anniversary!
